Action to create entry via function

Hello

We would like to create an entry (CPT) via function. We integrate the listings in a Woocommerce account section, so users can edit their content.
When a payment has been made, we would like to create a CPT entry. As creating the entry via WP does not populate GF, resulting in an empty list, we need another way.

Is there an action we can use to create this entry on the fly?
