Improve alt text on images

It would be good to check our alt text, and make sure it meets accessibility guidelines.

For example, when providing icon images in-line (like in the filters and thresholding episode) - it may work better with screen readers to keep it short like "Napari's eye" rather than "A screenshot...", which is more suitable for main figures.
