UI/UX: Click on </>Manage Environments and it opens a box next to the exact same thing in the bar on left? Eh? I can double click to move some items, no idea why or what that does, how about some decent documentation and a bit more logic on the UI/UX? KISS
DOCS: Insomnia accounts, organisations, enterprise, subscription plans, and then some extremely light documentation... Is there another docs website other than "docs.insomnia.rest" because that sucks. Luckily redit exists... How about documenting every little minor to major function? KISS
UI/UX: It's impossible to drag anything to the bottom outside of a folder if the bottom entry is a folder. EG. Drag item from last folder with no items under it at root. No go. You can however drop it at top to get to root level. Then tried to drag it down to below bottom folder, nope, no go. Make area below last folder a drop location. Only way to actually do this is to re-order the folders to make sure the last item is not a folder. Very old issue. Here's a demo of root level drag n drop. https://jqueryui.com/sortable/
UI/UX: Double click entry in left list start to rename, I know lets click again to put the cursor where I want to type? Nope, that would be too easy, left clicking to do that disables rename. If click outside of text area then sure do that, but if your clicking in the editable area, allow placement of the typing blinking vertical line.
UI/UX: Right click, opens dialogue select all, if not in right column (the response area), it highlights and selects all in the whole application? When in left column, right click should open a menu at mouse, same as when clicking on the tiny circle with a +
UI/UX / Feature/Function: Is there a way to view whats in vars / collections / environment variables, and to edit and clear their values? Major change, how about having clearly defined areas for these, or a button that would open their own modals with ui/ux in there to handle all their options?

Docs Docs Docs, do more documentation. The best info I can find on usage is on redit, youtube and github issues, quite funny reading much of it, lots of swearing...
