Updating to influxdb 2 has several advantages:

Influxdb is no longer supported
The Influxdb python client for 1 has been deprecated leading to compatibility issues with newer versions of python and packages
Being able to upgrade to a newer version would allow us to save a couple hundred megabytes off the worker image
It might be faster?
