OSMNX 2.0 migration

OSMNX 2.0.0 is released and has a migration guide.

For what it's worth, all of my latest local development has been with osmnx 2.0.0 and so we might just get this for free. Perhaps definition of done would be to pin the dependency to osmnx>=2?

hmm, yes, i guess! that's great, i thought we might get hit with a big API change. i still think we should review the migration guide to make sure all of our assumptions are the same. here's a short list:

• does it still build us a directed graph
• have the arguments to graph simplification or consolidation changed
• are we still requesting the correct highway key filters and other filters (network_type argument behavior matches 1.*)
