[Documentation]: Add best practice for patient session start time

What would you like changed or added to the documentation and why?

When dealing with human patients, the start time of the session is often protected information. In this case, we should advise users to enter 1900-01-01 for the session start time. This makes it clear that the data is fake.

We should update in the document and should edit the checks to account for this.
