[DOC] Update similarity search notebook

Describe the issue linked to the documentation

With the addition of Series search in #1900, the theoretical (deep dive) and benchmark notebook should be updated to include the new estimator. An extension of the similarity search notebook to show the use of the different parameters is also needed.

It would also be nice to vary the examples instead of just using GunPoint...
