Is there a way to pull a specific category of transactions (in my case contributions) from QBO into my CiviCRM?

@netzih no, not currently. Feel free to provide a PR or offer to fund such a feature if you are able too. I think generally, people are happy to import the financial records they need into CiviCRM.
