Why is this needed?

We had to disable SAR for v3 because we need to make some changes and the pipeline is not stable yet. The idea is to add SAR support in the next releases.

Once this is merged, revert the change made in #5360 and update the layer version & ARN in the SAR examples.

Tests phase has been completed on this new pipeline and I am now moving forward to implement it in this current iteration.
