The current prod logs are hard to read and contain lots of information that is not helpful for debugging.

Prevent logging of 200/201s for each endpoint
Add color coding back, it does work in Openshift
Figure out why lines such as: logger.debug("Report has changed, updating summary"), do not get logged at DEBUG level.
Add a date / time so we know when the errors occurred

Looks like some are using: logger = logging.getLogger(name) and some are using logger = structlog.get_logger(name)
