BUG | Does not install on node 20 or greater

Add official node required version to README

Need to investigate more but I think install might be broken on node 20 and up due to some dependency not building properly. But I was also noticing this on a 32-bit ARM platform so maybe this isn't an issue on other platforms.

Workaround

Either revert node OR revert npm

• Use node 18.
• Use npm 10.3.0 or lower
  • sudo npm install -g [email protected]
