How can we type the sequence "\""?
Ideally if you have "\" then typing another " next to the \ should not skip the cursor to the right.
This seems to work by default for characters which have pairs with unique characters, i.e. {\}} can be typed fine

The suggested approach to inserting a character verbatim (without 'mini.pairs' "rules") is to press <C-v> before it. So in this case it is " - \ - <C-v> - ".

Would it be possible to change the rules up so that typing " doesn't skip the cursor forward when typed after ?

Not with a config, I am afraid. The current behavior is [documented](https://github.com/echasnovski/mini.nvim/blob/0de7ac99824a315b9ef37aba0161f70bdbb1e66b/doc/mini-pairs.txt#L274-L2770 and is well established.

The issue here is how to interpret a neigh_pattern: whether failing to match it should discard the whole "closeopen" action or just some part of it. The decision was made to make it work only on "open" part and try "close" part without doing the match. Mostly for (very small) performance reasons, but also taking into account that inserting the single character can always be done with <C-v>.
