[REQUEST]: Set up redirects for ingest-related docs removed during spacetime revamp

Description

I removed quite a few files in #2880 to resolve #2879.

At some point (probably before 8.8 drops), we should set up redirects and remove the relevant sections from redirects.asciidoc. We need to decide whether it makes sense to keep the redirect page in cases where the content was completely removed. (For example, the guides that duplicated the Beats GS content. It might be really disorienting for users to link to that topic and get dropped in the Beats Guide.)
