[Request]: Update AI Assistant docs to cover the possibility of using self-managed connectors

Based on a conversation with @leemthompo :

Search connectors are available in both managed and self-managed flavors. For the latter, you don't need the Enterprise Search service.

self-managed require a different service to be installed.

So we have to update the pre-requisites and also mention that both types of connectors can be used.
