New esp_modem releases: v1.1 and v1.2

In the following days, a new esp_modem version will be published - v1.1. No major features nor fixes will be added, we're only formalizing the test procedure and including manual testing. More details are mentioned in the v1.1 milestone

The next minor release will be v1.2 including

• mode detection
• URC handling
