🛠️ [TASK] : Update or replace our pallas fork

Currently we are using our own fork of the pallas crate(s). The main reason is that we want to improve the performance of deserialization implemented in this pull request:
input-output-hk/catalyst-pallas#3

Ideally these changes should be pushed to upstream and then we can abandon our fork entirely. Also we want to periodically merge upstream changes to our fork.
