Change form latest to stable container versions to avoid breaking the deployment!

So the reason that the kompose versions are currently at latest is because it's based on the version from the official jitsi docker-compose file, which uses latest.

@rsoika please change imagepullpolicy to ifnotpresent to avoid the extra call to dockerhub.

I am not sure if the change to a stable version makes sense?

Should we do this or should we stay with the 'latest' version? The point is, that a lot of updates may confuse users when the version changes over night. On the other side the kustomize setup is more a kind of example than a place for productive usage.
