Use ethernet instead of wifi with EST-PoE-32?

I'd like to use this with an EST-PoE-32 I have, and it would be very easy for me to use ethernet/POE instead of wifi. It seems there are a number of places where the wifi config is present within the package. Simply specifying the ethernet config in esphome in HA won't do it due to the conflicts. I can fork the project and go hunting to remove the wifi config lines everywhere, but is there an easier way to do that?

The easiest way is probably to fork the project and modify it so that it works with your EST-PoE-32.
