These are a few of my favorite recipes

Mojito

65 ml rum

20 fresh mint

2½ tsp granulated sugar

Plenty of ice

1½ limes, cut in to wedges

Soda water to taste

Place the limes, mint and sugar into a sturdy glass and muddle to bruise the mint and release the lime juice. But be careful not to muddle to much. Add ice and pour over the rum. Top of with soda and stir.

Saffran Chicken

½ tsp cayenne pepper

1 tsp cumin

1 tsp coriander

1 tsp smoked paprika

2 tsp paprika

1 tsp tumerik

A little salt and black pepper

Olive oil

Chicken

Mix everything together and make a paste. Let the chicken sit in the paste for at least half an hour. Then bake in an oven on 210-220° celsius for 20 minutes. For the last minutes put your oven to grill so the outside dries up. Serve with sour cream, salat and rice. This is an original recipe from my mom and a family favorite.

Lummur

1½ dl flour

1 tsp baking powder

1 tbsp sugar

½ dl oats

1 eggs

1½-2 dl milk

25 g margarine

Raisins to taste

Chopped chocolate to taste

Start with melting the magarine on the pan on low heat. Next mix the baking powder, flour, sugar and oats. Then stir in half of the milk. The egg is the next thing you mix in and then the rest of the milk. The last thing to mix in is the magarine and raisins if wanted. Then all that is left is to bake on medium heat until golden brown. The best thing about this recipe is that it is so simple and therefor really easy to make changes to it. I usually put a lot more oats and use ricemilk insted of milk. This recipe is from a book my mother got in school and translated to english was called 'The Young Girl and the housework' but it has been rereleased and now translated is called 'The Young People and the Housework'.

Chia Porridge

2 tbsp Chia seeds

2 fresh dates

Cinnamon to taste

Rice Milk as needed

Cut the dades as small as you can and then put the chia seeds, rice milk and the dates in a bowl or a tupperware and stir it with a spoon. Let is sit for a couple of minutes and then stir a bit more. Then add as much cinnamon as you would like. You can either enjoy it a 10 minutes later or let it sit for a whole night. I usually do this at night and have it for breakfast the day after. I also never measure the ingredients I just put whatever feels right.
