[Request] UI for chunker serring for each type file

🥰 Feature Description

It will be cool that different types of files can be chunked in different ways
For example, I can add some special delimiters for splitting.
and can make small and large chunks for different file type.

🧐 Proposed Solution

maybe somwhere in settings we can get UI for each supported filetype.
And it will be greate if i can add my own file types with my own chunking settings

now chunker uses same chunk size and same overlap size
