feat: improve test suite using Docker-based testnet nodes #119

Current tests need improvement. Now that we have robust Docker deployment, we can:

Use Docker-based miners/validators for integration tests (all running on 1 VM)
Leverage testnet subnet 249 for real-world testing
Add comprehensive test cases
Implement proper mocking and fixtures
