Password reset procedure?

I've had OpenAlprWebhookProcessor working for about a year now. Earlier today I was performing other maintenance on my home server and rebooted it. After reboot, my user/pass is no longer working.
Is there a procedure to reset the username/password if I have root access to the host machine?
I am running it in docker on Ubuntu if that makes a difference.

More details:
I reverted to a previous snapshot of the VM, and it worked initially, I was able to login with my previous user account and all data was available.
Now, roughly 8 hours later, the user accounts are again getting rejected.
I noticed there was a "Register" button on the landing page, so I registered a new account, and found all the plate data, camera configuration and user accounts are gone.

I'm wondering what troubleshooting steps would be needed to troubleshoot an issue like this. It seems like the image reverted to a default snapshot, and this might be docker troubleshooting at this point.
