While https://github.com/SixSq/tasklist/issues/1974 suggests a switch from dockerfile-maven plugin to docker-maven-plugin plugin, none support cross-platform builds as of now - see fabric8io/docker-maven-plugin#1267.

Consider using Docker Buildx via mvn exec plugin.
