By following the official Ovirt installation guide, the ovirt-hosted-engine-setup package gets installed at version 2.7.0 and Ansible runs with Python 3.11 version.
There is an incompatibility fixed in this commit but not yet released that it's causing a failure in the hosted-engine --deploy command.
I did a workaround by manually applying the commit locally.
