Can some more btrfs subvolumes be added [Home and Snapshots]. I have try look at the code but to see if I could add them but got lost.

The installer currently doesn't have this option since it would have to cover quite a lot different options to cover usecases for btrfs. It might be easier to just do this after you have installed your system. I don't think there are any downsides to creating the volume later and moving everything over - except for the required additional time of course.
