Updated config.yaml and instrument weights

Hey Rob, I noticed you've finally included a lot of the new instruments you've been tracking in your system. I've always found studying your config to be pretty useful as a starting point when I make changes to mine. I've been gathering price data for most of the same instruments but haven't added them to my system yet. If you don't mind sharing an updated version of your config that'd be great.
