- 1⁄2 cup plain yogurt
- 1 large egg
- 1⁄4 cup vegetable oil
- 1 1⁄2 cups mashed bananas (usually 3 bananas)
- 3⁄4 cup granulated sugar
- 1 cup oat bran
- 1 1⁄2 cups king arthur unbleached flour (regular flour works fine too)
- 2 teaspoons baking powder
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon baking soda
- 1⁄4 teaspoon nutmeg (I use fresh)
Preheat oven to 375 degrees.Grease or spray muffin tin.
Combine yogurt,egg,oil,mashed banana, sugar, and oat bran in a bowl. Whisk togethr and set aside for 10 minute.
Whisk together the flour, baking powder, salt, baking soda, and nutmeg.
Whisk the banana mixture into the flour mixture. Fill 6 texas muffin pan till almost full (the muffins won't rise much). Sprinkle muffins with sugar if desired.
Bake the muffins for 25 min., until they are set and browned. Remove from the oven and let rest in the pan for 5 minute before removing.
I like to freeze them individually wrapped in plastic wrap in a freezer bag, then thaw in microwave for 30 s, cut in half, butter and grill on medium heat in cast iron skillet until golden brown. Then spread with Nutella! Yum
