Slightly modified from Tim Crone's "cowboy" recipe
Makes 4 full waffle maker (16) waffles
- 1c fed starter
- 2 c lukewarm water
- 2 1/2 c flour
- 1 T sugar or malt syrup
- 1 egg
- 4 T melted butter
- 1/4 c half and half
- 1 t salt
- 1 t baking soda
- 2 T sugar or malt syrup
- Put the 1c fed starter in a large glass bowl. Add 2.5 c flour, 2 c lukewarm water, and 1T sugar. Let rest overnight in warm spot.
- To the batter, add 1 egg, 4T melted butter and 1/4 c evap or instant milk. Combine the 1t salt, 1t soda and 2T sugar and mix well into batter.
- Allow batter to stand a few minutes, and then cook on near-highest setting on waffle maker. For our Villaware Uno Belgian waffle maker, usin setting 6, and ladle 1/2 c batter into each quadrant.
