Vanishing Oatmeal Raisin Cookies
My mom used to make these cookies all the time. They're soft, chewy, moist,
and delicious. And if you leave a plate of these cookies out in a house
with a few hungry kids, you'll find that they really do vanish!
Servings: 4 dozen cookies
Prep time: 20 minutes
Cook time: 8 minutes

Ingredients:
1/2 cup (1 stick) plus 6 tablespoons butter, softened
3/4 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt (optional)
3 cups oats
1 cup raisins
Equipment:
1 large mixing bowl
1 small mixing bowl
Cookie sheets
Electric mixer (optional)
Directions:
1. Heat oven to 350°F.
2. In large bowl, beat butter and sugars on medium speed of electric mixer
until creamy. (Or mix by hand.)
3. Add eggs and vanilla to mixture; beat well.
4. In small bowl, combine flour, baking soda, cinnamon and salt. Mix it up.
5. Pour small bowl into large bowl; mix well. The mixture should be thick, but
not yet doughy.
6. Add oats and raisins to large bowl; mix well. The mixture should now be a
dough.
7. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
8. Bake 8 to 10 minutes or until light golden brown. Cool 1 minute on
cookie sheets; remove to wire rack. Cool completely and serve.
9. If there are any leftovers, store them in a tightly covered container.
(There probably won't be leftovers.)
