In my company, we host our Gitlab instance over bare HTTP, not HTTPS.

What about adding a variable to customize URLs with regards to the HTTP protocol?

Well, I should have elaborated: would this be a per-service variable, global, both, ..?

Could be local, each repository doesn't share inevitably the same forge
