I wanted to stop by and say that this is a fantastic project and I admire the level of effort you've put into these to give them the level of polish that they have. I'm excited for your Sheets and M3 design rework!
I did want to write this asking if it would be possible to add "Sepia" to the filter mode. Currently, we have None, Dim, and Invert. I normally prefer Sepia, as it's easier for my eyes to work with and helps me stare at the screen for longer. I'm thinking kind of like the Firefox reader view...
Is this something that could be easily implemented?

That’s something I could do, but would you also want sepia in light mode? If so, you can go to File → Page setup and change the page background to the lightest yellow.
(Dark Docs is intended to be used when your computer is in dark mode. So if I made sepia a Dark Docs feature, when you switch to light mode you would no longer have sepia. If you want sepia all the time but don’t want to change your page colour, you’d need a separate userstyle.)
Thanks for your reply, I stay in dark mode almost exclusively, and think it would be a welcome addition if you get the chance to. Changing each document's color via the page setup can quickly get tiring.
