I would recommend changing:
p class="byline post-info">%s /p

to:
p class="byline post-info entry-meta"> %s /p

to work with Genesis themes like Outreach Pro. Otherwise the intended result is incorrect. Take a look at my site at the two different Latest Podcast Widgets. One uses Amplified and the other GS Featured.

You might need to edit/repost your comment above I think some code got stripped as it just says %s to %s.
