chore(deps): bump axios and @accordproject/concerto-util (#27)

Removes [axios](https://github.com/axios/axios). It's no longer used after updating ancestor dependency [@accordproject/concerto-util](https://github.com/accordproject/concerto/tree/HEAD/packages/concerto-util). These dependencies need to be updated together.


Removes `axios`

Updates `@accordproject/concerto-util` from 3.16.9 to 3.19.2
