feat: register Keycloak JacksonProvider to prevent failing on unknown properties

What this PR does / why we need it:

Keycloak client version requires updating unless we silently ignore unknown properties.

Hi @sergioa, thank you for the fix.

We are currently experiencing some discrepancies in the Keycloak RealmRepresentation, with test failures for certain properties returning null. Did you find a working fix yet?
