Description

It changes nixos-unstable to nixpkgs-unstable, as we don't use NixOS per se, just it's pkgs (and nixos-unstable ain't working now).

➜  polka-storage git:(chore/650/nix) polkadot -V
polkadot 1.17.0-967989c

➜  polka-storage git:(chore/650/nix) subxt version
subxt-cli 0.38.0-unknown

Closes #650 .
