Added v2 changes to the changelog

TBH I found the current changelog structure is a little bit hard to write and perceive (when is growing now).

What if we remove nesting and use structure like:

• v2
  • package.$schema (new)
  • schema.missingValues (new)
  • schema.categories (new)

In this case we also can stick to actually PRs timeline (historical order) making it easier to write/trace

I’m fine with having a flatter structure and adding the namespace to the properties.
