## Introduction

## Ingredients

- 2 tablespoons coconut oil
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 2 carrots, peeled and diced
- 2 cups crushed tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper (adjust to taste)
- 1 cup vegetable broth
- Salt and pepper to taste
- 1/2 cup chopped fresh cilantro for garnish

## Instructions

1. Heat the coconut oil in a large pot over medium heat.
2. Add the onion, garlic, and ginger, sautéing until the onions become translucent.
3. Mix in the red and yellow bell peppers and carrots, cooking until they start to soften.
4. Stir in the crushed tomatoes and tomato paste, blending well.
5. Season the sauce with smoked paprika, cumin, cinnamon, and cayenne pepper, stirring to distribute the spices evenly.
6. Pour in the vegetable broth and bring the mixture to a simmer.
