- 4 cups vegetable broth | ||
- 1 can (14 oz) diced tomatoes | ||
- 1/3 cup natural peanut butter | ||
- 1 can (15 oz) chickpeas, drained and rinsed | ||
- 2 cups chopped kale or spinach | ||
- Salt and pepper to taste | ||
- Fresh cilantro and chopped peanuts for garnish | ||

## Instructions | ||
|
||
1. Heat the olive oil in a large pot over medium heat. | ||
2. Add the onion, garlic, and ginger, sautéing until the onion is translucent. | ||
3. Stir in the cumin, coriander, and cayenne pepper, cooking for another minute until fragrant. | ||
4. Add the sweet potatoes, vegetable broth, and diced tomatoes to the pot. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the sweet potatoes are tender. | ||
5. Stir in the peanut butter and chickpeas, continue to simmer for another 10 minutes. | ||
