## Introduction

Today's mild lunch is a delightful vegan twist on a classic Italian dish. Creamy cashew-based sauce, sautéed mushrooms, and fragrant herbs come together to create a comforting and satisfying meal. Let's get cooking!

## Ingredients

- 250g linguine
- 2 cups of mushrooms, sliced
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1 cup of vegetable broth
- 1/2 cup of raw cashews, soaked in water for 2 hours
- 1/4 cup of nutritional yeast
- 2 tablespoons of fresh parsley, chopped
- 1 tablespoon of fresh thyme leaves
- 1 tablespoon of lemon juice
- 1 tablespoon of olive oil
- Salt and pepper to taste

## Instructions

1. Cook the linguine according to package instructions until al dente. Drain and set aside.
2. In a large pan, heat the olive oil over medium heat. Add the onions and garlic and sauté until translucent.
3. Add the sliced mushrooms and cook until they release their moisture and start to brown.
4. In a blender, combine the soaked cashews, vegetable broth, nutritional yeast, parsley, thyme, lemon juice, salt, and pepper. Blend until smooth and creamy.
5. Pour the cashew sauce over the mushrooms in the pan and stir to combine. Cook for another 2-3 minutes until the sauce is heated through.
6. Add the cooked linguine to the pan and toss to coat the pasta in the creamy sauce.
7. Serve the vegan linguine with a sprinkle of fresh parsley on top. Enjoy!
