## Ingredients | ||

- 250g fresh vegan tagliatelle | ||
- 100g tempeh, sliced into thin strips | ||
- 1 large red bell pepper, julienned | ||
- 2 tablespoons olive oil | ||
- 1 teaspoon minced garlic | ||
- 1 small onion, finely chopped | ||
- 200g cherry tomatoes, halved | ||
- 50g black olives, pitted and sliced | ||
- 2 tablespoons capers | ||
- 1 teaspoon dried Italian herbs | ||
- Salt and pepper to taste | ||
- Fresh basil leaves for garnish | ||

## Instructions | ||

1. Cook the vegan tagliatelle according to the package instructions until al dente. | ||
2. In a large skillet, heat the olive oil over medium heat. Add the tempeh strips and sauté until golden and crispy, about 5 minutes. Remove and set aside. | ||
3. In the same skillet, add the minced garlic and chopped onion, cooking until the onion is translucent. | ||
4. Add the red bell pepper and sauté for another 3 minutes. | ||
5. Stir in the cherry tomatoes, black olives, capers, and dried herbs. Cook for about 5 minutes, or until the tomatoes start to break down. | ||
6. Return the crispy tempeh to the skillet and mix well. Season with salt and pepper. | ||
7. Drain the pasta and add it to the skillet. Toss everything together for a couple of minutes to let the flavors meld. | ||
8. Serve garnished with fresh basil leaves. | ||
