- 200g tempeh, finely chopped | ||
- 2 tbsp soy sauce | ||
- 1 tbsp miso paste | ||
- 1 tbsp nutritional yeast | ||
- 1 tsp smoked paprika | ||
- 1 clove garlic, minced | ||
- 1 tbsp olive oil | ||
- 100g shiitake mushrooms, sliced | ||
- 50g sun-dried tomatoes, chopped | ||
- 50g black olives, pitted and sliced | ||
- 2 tbsp capers | ||
- Fresh parsley, chopped for garnish | ||
- 1 baguette, sliced and toasted | ||

## Instructions | ||

1. In a bowl, marinate the tempeh with soy sauce, miso paste, nutritional yeast, smoked paprika, and garlic. Let sit for 15 minutes. | ||
2. Heat olive oil in a pan over medium heat. Add marinated tempeh and cook until crispy, about 5-7 minutes. | ||
3. Add shiitake mushrooms to the pan and cook until soft, about 5 minutes. | ||
4. Stir in sun-dried tomatoes, black olives, and capers, and cook for another 2 minutes. | ||
5. Serve the tapas mixture over toasted baguette slices and garnish with fresh parsley. | ||
