## Introduction

## Ingredients

- 1 cup sushi rice
- 2 cups water
- 2 tbsp rice vinegar
- 1 tbsp sugar
- 1/2 tsp salt

- 1/2 cucumber, julienned
- 1 small bell pepper, thinly sliced
- 1/4 cup pickled radish, sliced
- 1/4 cup firm tofu, pressed and cubed
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1/4 tsp garlic powder
- 1/4 tsp ginger powder
- 1 tbsp nori, cut into small strips
- 1 tbsp sesame seeds
- Fresh cilantro for garnish

## Instructions

1. Rinse the sushi rice under cold water until the water runs clear.
2. Combine the rinsed rice and 2 cups of water in a rice cooker and cook according to the manufacturer's instructions.
3. Once the rice is cooked, mix in rice vinegar, sugar, and salt while it's still warm.
4. In a small bowl, combine soy sauce, sesame oil, garlic powder, and ginger powder to make a marinade.
5. Toss the cubed tofu in the marinade and let it sit for 10 minutes.
