## Introduction

Today's special creation is a vibrant, plant-based dish that encapsulates the essence of a juicy buffet with a delightful Asian twist. Our Vegan Asian Fusion Platter is designed to be a crowd-pleaser, combining a variety of textures and flavors that cater to all taste buds.

## Ingredients

- 200g dehydrated watermelon, thinly sliced and marinated in soy sauce and sesame oil
- 150g jackfruit, pulled and seasoned with vegan fish sauce
- 100g tempeh, marinated and grilled
- 1 large carrot, julienned
- 1 cucumber, julienned
- 1 red bell pepper, thinly sliced
- 200g firm tofu, cut into small cubes and fried until golden
- Handful of fresh cilantro and mint leaves
- 2 tablespoons sesame seeds, toasted
- Rice paper wrappers or large lettuce leaves for serving
- Sweet chili sauce for dipping
- Tamarind dipping sauce

## Instructions

1. Prepare the marinated watermelon by soaking the slices in a mixture of soy sauce and sesame oil for at least 2 hours.
2. Cook the pulled jackfruit with vegan fish sauce until it caramelizes slightly.
3. Grill the marinated tempeh until it has char marks and is fully heated through.
4. Arrange carrot, cucumber, and red bell pepper in a colorful array.
5. Fry the tofu cubes until they are crispy and golden.
6. Assemble the platter: Arrange the prepared ingredients beautifully on a large serving dish. Sprinkle with sesame seeds and garnish with fresh herbs.
7. Serve with rice paper wrappers or lettuce leaves and bowls of sweet chili sauce and tamarind sauce for dipping.
