## Introduction

- 1 cup teff flour
- 2 cups water
- 1 cup diced tomatoes
- 1 cup chopped bell peppers
- 1 cup cooked chickpeas
- 1 large sweet potato, cubed

- 1 tbsp ginger, minced
- 1 tsp turmeric

## Instructions

1. Start by making the injera. Mix teff flour with water and let it ferment overnight.
2. Pour the batter thinly on a non-stick pan and cook until bubbles form, then cover until fully cooked.
3. For the stew, heat olive oil in a pot. Add onions, garlic, and ginger, sautéing until golden.
4. Add the spices and stir for a minute until fragrant.
5. Mix in the tomatoes, bell peppers, sweet potatoes, and chickpeas.
6. Cover and simmer for about 20 minutes or until the sweet potatoes are tender.
7. Adjust seasoning with salt and black pepper, then add lemon juice.
8. Serve the stew hot over the injera and garnish with fresh cilantro.
