2. Pour the batter thinly on a non-stick pan and cook until bubbles form, then cover until fully cooked. | ||
3. For the stew, heat olive oil in a pot. Add onions, garlic, and ginger, sautéing until golden. | ||
4. Add the spices and stir for a minute until fragrant. | ||
5. Mix in the tomatoes, bell peppers, sweet potatoes, and chickpeas. | ||
6. Cover and simmer for about 20 minutes or until the sweet potatoes are tender. | ||
7. Adjust seasoning with salt and black pepper, then add lemon juice. | ||
