There is no 24.12.2 (tags/releases), why not just use 24.12.1 ?

Yes, just try using the latest 24.12 (in this case 24.12.1)

I suggest we change the version there: https://github.com/sentry-kubernetes/charts/blob/develop/charts/sentry/Chart.yaml#L6

to do this, you must first delete the tag.

I don't see why. We mark 26.12.1 as a fix deploying version 24.12.1

we currently have the app version 24.12.2, so you're suggesting making a new tag with the app version 24.12.1. do you think it's a good idea to downgrade versions?

I think it's fine as long as we only downgrade patch version.

I would be worried about minor versions.
