This reverts commit 3d3cb67. Vite version 5 is causing the builds to not properly render the layouts, so sticking to version 4 for now

The packages that are not upgraded to their latest versions cannot be upgraded without breaking stuff (i.e. vite's latest version causes the layouts to loose styles for the built site, even though the dev server works perfectly).
