feat: add Hedera Mainnet, Testnet, and Previewnet network definitions

What

• add network definition for hedera mainnet
• add network definition for hedera testnet
• add network definition for hedera previewnet

Why

• DRY: so that devs don't need to add a custom network in each app they build for Hedera
