## Instructions | ||

1. In a mixing bowl, whisk together balsamic vinegar, olive oil, soy sauce, maple syrup, black pepper, smoked paprika, minced garlic, and grated ginger to create the marinade. | ||
2. Add the thinly sliced bitter melon and tofu cubes to the marinade. Mix well to ensure even coating. Let it marinate for at least 30 minutes. | ||
3. Heat a skillet over medium-high heat. Remove tofu and bitter melon from the marinade and sauté until the tofu is golden brown and the bitter melon is tender. | ||
4. Add the julienned bell peppers to the skillet and cook for another 5 minutes, stirring frequently. | ||
