* 1 teaspoon ground coriander | ||
* 1/4 teaspoon cayenne pepper (adjust to taste) | ||
* 3 cups vegetable broth | ||
* 3 ripe tomatoes, diced | ||
* 1 large sweet potato, peeled and cubed | ||
* 1 red bell pepper, chopped | ||
* 1/2 cup natural peanut butter | ||
* 1 can (15 oz) chickpeas, drained and rinsed | ||
* 2 cups chopped kale or spinach | ||
* Salt and pepper to taste | ||
* Fresh cilantro and crushed peanuts for garnish | ||

## Instructions | ||

1. Heat the coconut oil in a large pot over medium heat. | ||
2. Add the onion, garlic, and ginger, and sauté until the onions are translucent. | ||
3. Stir in the cumin, coriander, and cayenne pepper, cooking for another minute until fragrant. | ||
4. Pour in the vegetable broth, add the tomatoes, sweet potato, and bell pepper. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until sweet potatoes are tender. | ||
5. Stir in the peanut butter and chickpeas, continue to simmer for another 10 minutes. | ||
6. Add the kale or spinach, and cook until the greens are wilted. | ||
7. Season with salt and pepper to taste. | ||
8. Serve hot, garnished with fresh cilantro and crushed peanuts. | ||
