## Introduction

Dive into the delightful world of pickled flavors with this unique vegan Bento Box recipe. Inspired by the traditional Japanese bento, this dish combines a variety of pickled vegetables with a hearty vegan rice base, creating a colorful and nutritious meal that's perfect for any day.

## Ingredients

- 1 cup sushi rice
- 1 1/4 cups water
- 2 tbsp rice vinegar
- 1 tbsp sugar
- 1/2 tsp salt
- 1/4 cup pickled radishes, thinly sliced
- 1/4 cup pickled carrots, julienned
- 1/4 cup pickled cucumbers, thinly sliced
- 1/4 cup pickled ginger
- 1/4 cup firm tofu, cubed and lightly fried
- 1 tbsp sesame seeds, for garnish
- 1 tbsp nori strips, for garnish
- Fresh cilantro leaves, for garnish

## Instructions

1. Rinse the sushi rice under cold water until the water runs clear.
2. Combine the rinsed rice and 1 1/4 cups water in a rice cooker. Cook according to the manufacturer's instructions.
3. Once the rice is cooked, transfer it to a bowl. Mix in rice vinegar, sugar, and salt while it's still warm.
4. Let the seasoned rice cool to room temperature.
5. Arrange the pickled vegetables and tofu over the rice.
6. Garnish with sesame seeds, nori strips, and fresh cilantro leaves.
7. Serve the bento box at room temperature or slightly chilled.
