- 1/4 cup pickled radishes, thinly sliced | ||
- 1/4 cup pickled carrots, julienned | ||
- 1/4 cup pickled cucumbers, thinly sliced | ||
- 1/4 cup pickled ginger | ||
- 1/4 cup firm tofu, cubed and lightly fried | ||
- 1 tbsp sesame seeds, for garnish | ||
- 1 tbsp nori strips, for garnish | ||
- Fresh cilantro leaves, for garnish | ||

## Instructions | ||

1. Rinse the sushi rice under cold water until the water runs clear. | ||
2. Combine the rinsed rice and 1 1/4 cups water in a rice cooker. Cook according to the manufacturer's instructions. | ||
3. Once the rice is cooked, transfer it to a bowl. Mix in rice vinegar, sugar, and salt while it's still warm. | ||
4. Let the seasoned rice cool to room temperature. | ||
5. Arrange the pickled vegetables and tofu over the rice. | ||
6. Garnish with sesame seeds, nori strips, and fresh cilantro leaves. | ||
7. Serve the bento box at room temperature or slightly chilled. | ||
